Winter Breakfast: Updated Cream of Wheat
Almost every morning I have a smoothie (love ones like this from my amazing friend Melissa) with a scoop or two of the best protein powder. Smoothies like these get me off and running on good, clean fuel and I’m happy knowing I’ve already had a good serving of veggies.
But there are some mornings in the fall and winter when the chill is just too much and I want the comfort of a childhood favorite: Cream of Wheat, updated for my grown-up tastes.
I pack it full of superfoods like maca powder, chia seeds(great texture), flax, almond butter and lightly sweeten it with a bit of coconut sugar and maple syrup . Makes me feel comforted – and satisfied on every level. Made with Bob’s Red Mill Organic Wheat Farina, I feel like it’s at least a step up in quality from the usual supermarket option.
Updated Cream of Wheat
1 C. water
1/4 C. Bob’s Red Mill Farina
pinch of salt
1 tsp chia seeds
1/2 tsp maca powder
1 tsp flax seeds
1 tbs almond butter
1 tsp coconut sugar
Milk of choice
Maple syrup and bananas (optional)
Bring 1 cup of water and a pinch of salt to a near boil. Remove from heat. Add 1/4 cup of Creamy Wheat Farina cereal slowly, stirring constantly. Return to burner and bring to a boil, then lower heat and cook approximately 3 minutes or until thickened, stirring constantly.
Remove from heat and stir in chia, maca, flax, almond butter and coconut sugar. Drizzle with maple syrup and milk of choice. Top with bananas. Enjoy!
